A list and description of each different kind of sake sold at the brewery. All are available to be sampled.
Honjozo [本醸造]
A smooth, lightly aromatic sake with added brewer’s alcohol—clean, easy-drinking, and perfect for warming or casual meals.
Junmai [純米]
A pure, full-bodied sake made with only rice, water, and koji—rich in flavor, ideal for those who enjoy a bold, traditional brew.
Ginjo [吟醸]
A fragrant, refined sake brewed with highly polished rice—light, smooth, and delicately fruity, best served chilled.
Tamago-zake [玉子酒]
A comforting blend of warm sake and whipped egg, gently sweetened—traditionally enjoyed as a soothing remedy on cold nights.
Toso [とそ] Spicy!
A spiced medicinal sake infused with warming herbs—traditionally sipped at New Year to ward off illness and invite good fortune.
Daiginjo [大吟醸]
An elegant, ultra-premium sake with floral aroma and refined taste—crafted with highly polished rice for a silky, smooth finish.
Shiboritate [しぼりたて]
A freshly pressed, unaged sake bursting with youthful vigor—bold, lively, and best enjoyed chilled for its crisp character.

A creamy, coarsely filtered sake with a gentle sweetness—cloudy in appearance and rich in texture, perfect for dessert pairings.

Nama-zake [生酒]
An unpasteurized sake with a fresh, lively taste—bright, bold, and slightly wild, best kept chilled to preserve its raw character.
Jizake [地酒]
A regional craft sake brewed in small batches using Bukyo’s pure spring water and local rice—earthy, balanced, and deeply rooted in tradition.
Soju [소주]
Clear & colorless eastern liquor, smooth and mild, though hits hard when one does not expect it. Comes in flavors; rolanberry, grapefruit, peach, lemon, or flavorless.
Awa Sake [泡酒]
A bubbly, effervescent sake perfect for celebrations or light sipping—refreshing, crisp, and easy on the palate.
Tei-Aru Shu [低アル]
A gentle, low-alcohol sake with subtle flavor and soft aroma—ideal for light sipping, daytime pairing, or newcomers to the world of sake.
Kijoshu [貴醸酒]
A luxurious, dessert-style sake brewed with sake in place of water—velvety, sweet, and rich, with notes of dried fruit and honey.

A curated set of six of brews showcasing varied styles and profiles—perfect for discovering your palate across sweetness, aroma, and finish.
Okami One-pup Sake [ワンカップ酒]
Easy on the coin pouch, bold in spirit—affordable, single-serve jars with our iconic okami for casual sipping or collecting.
Otsumami
Snacks typically served with alcoholic drinks and encouraged to be eaten whilst customers are sampling or drinking.
Edamame [枝豆]
Soybeans in pods, can be ordered spicy, salted, peppered, or plain.

Onigiri [おにぎり]]
Pre-packaged rice balls wrapped in seaweed with chicken, salmon, tuna mayo, veggies, umeboshi, okaka, mentaiko, or konbu.

Senbei [煎餠]
Savory and round doman crunchy rice crackers, can be salted, spicy, or sweet.

Ika Ten [イカ天]
Squid tempura in batter and fried, seasoned with salt and crunchy.

Saki Ika [さきいか]
Dried spicy shredded calamari, seasoned with salt and red chili.

Nori Ten [のり天]
Seaweed tempura, light and crisp whilst the batter itself is thicker and slightly chewy.

Ika Kun [イカ燻]
Seasoned dried calamari, small rings of tender dried squid, can be salted or with chili.
→ Pairs well with: Honjōzō
Hoshigaki [干し柿]
Dried persimmons—rich, chewy, and naturally sweet.
→ Pairs well with: Kijoshu, aged sake
Yatsuhashi [八ツ橋]]
Cinnamon-flavored mochi triangles filled with anko, often from Kyoto. Subtle and chewy.
